Both are obtained from the leaves of one plant, Camellia sinensis .
The difference between the two products lies in the type of work they experience after the leaves: those designed to get black tea are fermented (or, more precisely, are subjected to oxidation). The antioxidant components of black tea, and then disappear after the process. The leaves for the production of green tea, however, are blocked immediately subjecting them to heat in the fermentation immediately after harvest (instead they can start the process of oxidation), so I worked in various styles and, finally, dried: for this reason remain green and the infusion has a light color and a pleasantly bitter flavor.
The process for the production of black tea is as follows:
1. The collection
2. Drying
3. Rolling (the leaves are rolled)
4. Oxidation or distillation (leaves are left to dry for 3-4 in humid places where they ferment and oxidize, taking a dark color)
5. Drying
The process of green tea, which differs a bit ':
1. The collection
2. Drying (heat which inhibit oxidation)
3. Rolling (the leaves are rolled)
4. Drying
The green tea, having a higher amount of polyphenols that have not been eliminated in the processing (in particular EGCG, holding a proven anti-inflammatory and anti-cancer) has antioxidant properties and may reduce the rate of cholesterol, some researchers say that counteract the Helicobacter pylori responsible for the ulcer, increasing the use of fat for energy (therefore it would follow a reduction of body fat, even if minimal: for effective action should drink about a liter day).
The black tea comes mainly from plantations in Africa, India, Sri Lanka and Indonesia, while the green tea comes from eastern countries like China and Japan.
By the way, add another benefit to the already excellent green tea. Beviamolo using Kangen water pH 9.5 to have a double benefit, in addition to excellent anti-oxidant properties of tea exploit the capabilities of this powerful water absorption of microcrystalline (try it with cold water and you'll understand the potential of this water!)
